Ingredients

   Based on single portion   

  • 1 pound ground beef

  • 1 clove garlic

  • 2 green peppers, chopped

  • 2 large onions, chopped

  • 1 quart canned tomatoes (or 2 to 3 pounds fresh)

  • 2 teaspoons salt

  • 2 tablespoons chili powder

  • 1/8 teaspoon paprika

  • 1/4 teaspoon crushed red pepper

  • 1/2 teaspoon black pepper

  • 2 bay leaves

  • 1 large can (28 ounces) kidney beans (or other beans


* Adjust chili powder to taste

Preparation

Step 1

    Brown the ground beef in a small amount of oil. 


Step 2

    Add garlic, green peppers, and onions, and cook until onions are translucent. 


Step 3

    Next, add tomatoes (if using fresh tomatoes, remove the skins first). Then add all remaining ingredients except beans, and let simmer for 2 hours. Add beans and heat through.


Step 4

    Top with a nice mature cheddar cheese. Serve hot with saltine crackers. Also works great as a taco, burrito and taco salad filler!
