A well deserved warm treat for all those busy Gardeners year round. Who could resist the temptation of those ripen bananas baked in a loaf of perfection? Add walnuts for added texture. Enjoy!

Ingredients

   Based on single portion   

  • 1-3/4 cups sifted all-purpose flour

  • 2 teaspoons baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/3 cup butter

  • 3/4 cup sugar

  • 2 eggs, well beaten

  • 1 cup mashed, fully ripe bananas

Preparation

Step 1

    Preheat oven to 350°F (175°C). 


Step 2

    Grease a standard size loaf pan.


Step 3

    Sift together the flour, baking powder, soda and salt. Cream the butter. Add the sugar gradually and continue beating until light and fluffy. Add the eggs and beat well.


Step 4

    Add the flour mixture alternately with the mashed bananas a little at a time, mixing after each addition only enough to moisten the dry ingredients.


Step 5

    Turn into prepared pan and bake for 1 hour and 10 minutes.

Note - CAUTION the heated mixture and cooking pans will be super HOT, please take care.
